Welcome to my website. You will find my insights on nutrition, whole-food plant-based diets, and life as a Nutrition major. I became interested in healthy eating in my mid-20’s. Looking back, I cringe when I think about what I thought was healthy. Since then, I have gradually improved my eating habits. I quit consuming meat in 2009 and went fully plant-based in 2011.

In 2015, I was on an unfulfilling career path. I believe I had reached a dead-end, with little chance of any career advancement. My wife encouraged me to go back to school, and in October of 2015, I got my Hogwarts Letter. The following January, I moved out from under the stairs at 4 Privet Drive for good and started classes at Pellissippi State Community College. Despite juggling the responsibilities of a science-heavy full-time load of classes, family, 2 part-time jobs, and 3 cats, I really enjoyed being back in school. I graduated with a 3.83 GPA in the Spring of 2018 and transferred to The University of Tennessee in the fall semester.

Many others pursuing the RDN/LDN credential followed a different path. It took an unsuccessful stint in college for me and almost 25 years of hard knocks to get to this point. I may be older than most of my classmates, but I share many things in common with them. When I first started school, I had no idea how it would go. I didn’t know how I would fit in socially, or if I could even relate to people half my age. Despite what the older generation says about Millennials and Generation-Z, the best and the brightest among them measure up to the best and the brightest from any generation. I have enjoyed my time at community college immensely. I could relate to the other non-traditional students and I found that I could still relate to younger students.
